Carrot and orange mini loaves: a recipe from Laura's London

A bite-sized take on a classic dessert, says our baking columnist Laura Timson

These delightful carrot and orange mini loaves are a fun bite size take on a classic.

A light and spicy sponge packed with carrots and crunchy walnuts, topped with deliciously creamy cheese frosting - heaven.

Ingredients (makes 12)

300g organic self-rising flour

3 organic eggs

210g organic dark brown sugar

14 tsp sunflower oil

300g grated carrots

2 tsp cinnamon

1 tsp vanilla paste

2 tsp mixed spice

100g chopped walnuts

Zest of 1 orange

Cream cheese frosting

100g butter

150g full fat organic cream cheese

500g icing sugar

Method

Preheat the oven to fan 140C/conventional 160C/ gas 3

Grease a 12-hole mini loaf tin

Add the flour, spices, cinnamon, sugar and walnuts into a bowl and mix thoroughly

Now add the eggs, sunflower oil, carrots, orange zest and vanilla paste. Mix.

Pour into the mini loaf tins, and bake in the oven at 160c fan for 10-15 minutes until the sponge is light and springy to the touch.

Once cooked, take out of the tins and leave to cool on a wire rack.

For the cream cheese frosting, cream together the butter, cream cheese and icing sugar.

Once the cakes are cooled you can pipe the frosting ontop and chopped walnuts for decoration. Heaven!
