The Smokehouse lunch box: pastrami roll

Last week Laoise Casey asked us to prolong the summer with her lunch box inspired by ToastED restaurant in Dulwich. This time she celebrates the sandwich:

There are not enough proper sandwiches. A proper sandwich should make you happy and leave your work colleagues feeling forlorn about their listless lunches. So this week my lunch box is inspired by the brilliant Smokehouse in Islington run by Neil Rankin. ‘This is the place to show us why man discovered fire’, this newspaper’s restaurant critic Fay Maschler wrote last year.

So go on, take a hunk of brisket, whip out your Big Green Egg and get that fire started.

Just kidding, let’s make it a little easier. This sandwich is all about using beautiful ingredients. I am using pastrami, a smoked meat that Neil would approve of, combined with gochujang mayo (a Korean hot pepper paste) and kimchi (Korean fermented cabbage), gherkins and red onions.

Preparation time: 5 minutes

Cost to make per portion: £2.90

What you will need:

1 roll

1 tbsp. mayonnaise

1 tsp. gochujang

2 – 3 slices pastrami

3 slices kimchi

3 slices red onion

2 gherkins

Handful rocket leaves

How to make it:

Mix the mayonnaise with the gochujang paste. Gochujang packs a punch, I normally use 1 tsp.gochujang paste to 1 tbsp. mayonnaise but you can add more or less depending on your taste. Spread on your sliced roll.

Layer up your sandwich with pastrami, gherkins, kimchi, red onions and rocket leaves.
