Brat to team up with Michelin-starred Basque restaurant Elkano for one-off dinner

Shoreditch restaurant Brat is to welcome the team from Elkano, a legendary Michelin-starred restaurant in Spain, for a special one-off dinner next month.

Brat will host chefs Aitor Arregi and Pablo Vicari from the restaurant on March 5. Elkano, from San Sebastian in the Basque Country, is famed for using open-air charcoal grills for more than fifty years, a technique that has heavily influenced Brat chef Tomos Parry.

Arregi and Vicari will cook a six course menu alongside Parry, demonstrating their shared love of over-fire cooking and Basque food traditions. Parry will be in charge of three courses while Arregi and Vicari will cook the others.

Brat is named after Tomos Parry's signature flame-cooked turbot dish, which was inspired by a similar dish served at Elkano.

“I had a seminal lunch at Elkano a few years ago and been visiting ever since," said Parry.

"My meals there have changed the way I thought about quality of flavour and the expression of terroir. I am hugely inspired by their intuitive fire cooking style, which Brat owes a lot to – their slow grilling approach to the whole Turbot really drives our style. I’m truly humbled to have these pioneers join us in the kitchen."

Elkano was opened in 1964 by Aitor's father Pedro Arregi, who passed away in 2014. The teams will also be working closely with farmers and fishermen local to London, with the menu focusing on fresh, seasonal ingredients – another key part of Elkano’s ethos.

Like the Spanish icon, Brat also has a Michelin star, which it earned within its first year of opening, picking it up at last year's London ceremony.
