First look: Sardine, Old Street — new restaurant from Dock Kitchen protégé Alex Jackson

Former Dock Kitchen and Rotorino chef Alex Jackson is about to swing open the doors to his first restaurant, Sardine.

Set on Old Street and inspired by southern Europe, it takes influences from the French regions of Provence and Languedoc, the islands of Corsica, Sardinia and Sicily, Italy’s Amalfi Coast and Spain’s coastal Catalonia area as well as some of North Africa.

The centrepiece of the restaurant will be one large communal table, where food such as lamb à la ficelle — a whole leg of lamb tied on string and cooked over an open fire — will be served.

In the video above Alex Jackson shows us the restaurant and talks about the dishes he will be serving.
