Lima: Andean delicacies are thrown a fine dining fiesta

The first Peruvian restaurant to earn a Michelin star in the capital still takes out tastebuds for a tono

Peru’s capital city is earning itself a growing reputation for culinary excellence – unfortunately it’s a little tricky to pop there for dinner.

Lima London however, its considerably closer namesake, might be a tad easier, and is the first Peruvian restaurant to earn a Michelin star in the capital. Head chef Roberto Ortiz’s work is overseen by Virgilio Martinez, a giant of contemporary Peruvian cooking, whose restaurant back in the real Lima (keep up) currently resides at No.5 on the World’s 50 Best Restaurants list.

Lima’s flavours are the pinnacle of London’s Peruvian epiphany, with the astounding aesthetic of the dishes – naturally vibrant with indigenous ingredients – follow suit. Silky spiced tiraditos (similar to sashimi or carpaccio) and ceviches (the Peruvian national dish) showcase an expert hand with the raw fish that underpins so much of the national palette.

Succulent slow cooked meats also feature, but there’s an unexpected star on the menu: the humble potato. This staple of Peruvian eating is released from British carb-phobia and exalted, flying solo throughout the menu, most pertinently in a main of 6000m clay-baked potatoes, served with black, red and white quinoa, dried leaves and Amazonian chestnuts.
