Anyone who has found themselves in Borough Market with pocket money to spend is likely to have to have come across this culinary leviathan. From cracked crab to octopus
carpaccio, the crew serve up simple, fresh seafood from their own wholesale company - and there’s now a growing portfolio of sites across the capital to ensure no corner goes without its fix.

Top of the menu are the team’s oysters, which they farm in Cornwall and are widely acknowledged to be among the country’s best. They’re available alongside different varieties from across the UK, Ireland and France either straight-up, as part of decadent seafood platters, or cooked and dressed - such as in an explosive umami-rich tempura version laced with sweet miso and bonito flakes.

It’s worth checking in on the regular oyster happy hours, when you can shell out for just £1 a pop - times vary by branch.

Given the restaurants’ fishy focus, the wine list errs on the lighter side, but is notably good value with plenty of unusual options, served alongside craft beers and cocktails - including the Wright Brothers Bloody Mary served with - you guessed it - an oyster.
